  1. CHICKEN BURGERS

INGREDIENTS

1 1/2 lb. ground chicken

3/4 tsp. smoked paprika

1 clove garlic, minced

3 green onions, minced

Salt

Freshly ground black pepper

2 tbsp. olive oil

4 slices cheddar

4 leaves butterhead lettuce

2 c. coleslaw

1 avocado, thinly sliced

1/4 small red onion, thinly sliced

1 jalapeño, thinly sliced

4 burger buns, split and lightly toasted

 

DIRECTIONS

  1. Combine chicken, paprika, garlic and green onions in a large bowl and season with salt and pepper. Divide mixture into 4 patties.
  2. Heat oil in a large skillet over medium heat. Add burger patties and cook on both sides for 8 to 10 minutes. Top with cheddar until just melted. Remove from heat and transfer patties to a plate.
  3. Stack lettuce, coleslaw, chicken burgers, avocado, red onion, jalapeño and more coleslaw on top of bottom buns.
  4. Close sandwiches with top buns and serve on state-shaped cutting boards to add to the 4th of July love.

 

  1. CLASSIC POTATO SALAD

Serves: 6

INGREDIENTS

3 lb. gold potatoes, chopped into 1” pieces (use a cutting board)

Salt

1 1/2 c. mayonnaise

1 small red onion, finely chopped

1 tbsp. mustard sauce

1 tbsp. lemon juice

1/4 c. chopped pickles

1/2 tsp. paprika

4 hard-boiled eggs, chopped

1/4 c. finely chopped chives

Freshly ground black pepper

 

DIRECTIONS

  1. Bring water to a boil in a large pot, add salt and potatoes. Cook until potatoes are easily pierced with a knife. Drain and let cool slightly.
  2. In a large bowl, combine mayonnaise, red onion, mustard, lemon juice, pickles and paprika. Stir, fold in cooked potatoes, eggs and chives, then season with salt and pepper. Refrigerate until ready to serve.

 

  1. CORN ON THE COB

INGREDIENTS

4 ears corn, shucked

Butter

Salt

 

DIRECTIONS

  1. Preheat grill to high and heat for 10 minutes. Add corn and cook, turning often, until charred, about 10 minutes.
  2. Spread butter over warm corn and season with salt.

 

  1. WATERMELON SANGRIA

Serves: 10-12

INGREDIENTS

1 watermelon

1 (750-ml) bottle white wine, chilled

2 c. white rum

1 c. seltzer

1/3 c. lime juice

2 limes, thinly sliced

2 c. assorted fresh or frozen fruit, such as pineapple, blueberries, strawberries

 

DIRECTIONS

  1. Using a large spoon or ice cream scoop, scoop out watermelon and transfer to blender.
  2. Blend watermelon until smooth. (Strain seeds if desired)
  3. Add white wine, rum, seltzer and lime juice and stir until combined, then add limes and fruit.
  4. Refrigerate until chilled, about 2 hours, then serve with fruits, cheese, crackers on a wooden state-shaped cutting board.

 

  1. FIRECRACKER STRAWBERRIES

Serves: 10

INGREDIENTS

3 c. strawberries

4 c. vodka

1 1/2 c. marshmallow crème

1 c. blue pop rocks

 

DIRECTIONS

  1. Fully submerge strawberries in a large bowl with vodka. Place in refrigerator and let soak for at least 1 hour.
  2. Drain strawberries, reserve the vodka for future use. Microwave marshmallow crème for 10 seconds. Dip berries first in fluff, then into Pop Rocks. Serve.

 

  1. BACON-WRAPPED PICKLES

INGREDIENTS

18 mini dill pickles

1 (8-oz.) block cream cheese, softened

1 c. shredded cheddar

1 clove garlic, chopped

12 slices bacon, cut into thirds

 

DIRECTIONS

  1. Preheat oven to 400º. Halve pickles and scoop out centers.
  2. Stir together cream cheese, cheddar, and garlic in a small bowl.
  3. Spoon mixture into pickles and wrap with a cut slice of bacon.
  4. Transfer to a baking sheet and bake until mixture is warm and bacon is crispy, about 18 minutes. Serve hot.

 

  1. HOTDOGS

INGREDIENTS

2 c. shredded mozzarella

4 oz. cream cheese

2 large eggs, beaten

2 1/2 c. almond flour

2 tsp. baking powder

1 tsp. salt

8 hot dogs

4 tbsp. butter, melted

1 tsp. garlic powder

1 tbsp. freshly chopped parsley

Mustard & ketchup, for serving

 

DIRECTIONS

  1. Preheat oven to 400° and line a baking sheet with parchment paper. In a large microwave-safe bowl, melt together mozzarella and cream cheese.
  2. Add eggs and stir to combine then add almond flour, baking powder, and salt.
  3. Divide dough into 8 balls and shape each ball into long ropes. Wrap a rope around each hot dog.
  4. Whisk together butter, garlic powder, and parsley in a small bowl. Brush garlic butter over each hot dog and bake until golden, 10-15 minutes.
  5. Serve with mustard & ketchup.
